Super Duper Salad

I am craving nutrient dense and cleansing salads since I returned home and this salad fits the bill. A simple shredded white cabbage is the foundation of this nutrient dense salad. I used sunflower sprouts but you can use any sprouts you have around or find in your supermarket. There was lots of fresh parsley in the herb garden and I added more punch with the green onions (spring onions) though I only used the white part. Goji berries added pop with their bright colour not forgetting their antioxidant properties. And of course a few walnuts to provide the essential fats. I used my favorite pomegranate vinegar in the dressing but you could substitute your favorite kind. As per usual the dressing is oil free! The various amounts of ingredients in this salad are very flexible feel free to play and let me know what you discover.

Ingredients

Serves: 2
Time: 20 minutes

Salad

2 cups shredded white cabbage
2 large stalks celery, thinly sliced on diagonal
5 green onions, white part only thinly sliced
1 big handful parsley, chopped
1 big handful fresh sprouts, for example sunflower or broccoli
2 heaped tablespoons goji berries
2 heaped tablespoons chopped walnuts
Salt and pepper

Dressing

2 tablespoons shoyu, tamari or soy sauce
1 tablespoon plus 1 teaspoon of clear honey
2 teaspoon vinegar, cider, pomegranate or balsamic
1 teaspoon lemon juice

What to do

Toss the salad ingredients into a large bowl.

Blend the dressing ingredients together, pour over the salad and stir to blend well. Adjust the seasoning. Enjoy and give your body a real gift! Yum.
