Stewed Fruit Compote

Spice up your breakfast with this festive Stewed Fruit Compote. Dried fruit is available all year round, so transform your porridge or muesli with store cupboard ingredients.Top it with yoghurt or coconut cream for a delicious dessert.

Just place a variety of dried fruit in a pan and cover with water. I used apricots, prunes, mango, Goji berries, raisins and sultanas for this compote.

Using a potato peeler, slice away two or three strips of lemon rind and add to the pan with a stick of cinnamon. And finally, split a vanilla pod, scrape the seeds into the pan, and throw in the whole pod.

Bring the fruit to a boil and simmer gently for about 10 minutes, until the fruit is soft.  The juice will be absorbed into the fruit. Add more water if you desire. Sweeten with honey or maple syrup.

Allow to cool and store in the fridge.
