Raw Buckwheat Porridge

Sometimes when I listen to my body I know I need a raw breakfast and here is one of my favorites. Raw buckwheat porridge. With a little forethought it is best soak the buckwheat and goji berries in the water overnight then everything is ready to go in the morning. This breakfast is raw, gluten free, and packed with nutrient dense ingredients. Add a little fragrance by using a pinch of home made vanilla salt.

I like to pour a little home made nut milk over the porridge just before serving. The best way to start your day!

Ingredients

1 cup raw buckwheat, soaked in water for a minimum of 1 hour or overnight
1 tablespoon chia seeds
1 tablespoon flax meal
1  tablespoon goji berries. soaked in a little water for 1 hour or overnight (optional)
2 tablespoon liquid sweetener, date syrup, agave, maple syrup or honey
Pinch of ground cardamom (optional)
Pinch of salt
Seeds from one vanilla pod or 1/2 teaspoon pure vanilla extract
Few sultanas (golden raisins) or raisins (optional)
About 1 cup of non-dairy milk

Topping
Pumpkin seeds, sunflower seeds, hemp seeds, walnuts, and fresh fruit

What To Do

1. Place the buckwheat a bowl or large jar and cover with the water. Soak for a least one hour or overnight. Tip the soaked buckwheat into a sieve and rinse really well, until the water is clear.

2. Place the buckwheat into a Vitamix or similar blender along with about 2/3 cup of the nut milk, chia seeds, ground flax seeds, sweetener, vanilla and a pinch of salt or vanilla salt. Also add the liquid from the goji berries. Add more nut milk if needed. The buckwheat porridge will continue to thicken after you have finished blending.

3. At the very end add the goji berries and raisins so that they remain whole.

4. Serve in bowls topped with the nuts, seeds and fruit. This porridge is delicious with a little nut milk poured on the top just before eating.
