Coffee and Cacao Smoothie

When I was choosing a name for this blog I knew that the word yum had to be included. It is one of the great joys of my life to create a drink or a meal for family and friends and the first word after a sip or a taste is “Yum”. This coffee and cacao smoothie did just that! It is velvety smooth and richly delicious.

I made this smoothie while I was in Cornwall and we made it after a walk on the beach. We needed an energy boost to carry us into the rest of the day. I keep frozen bananas in the fridge ready to pop into a smoothie or blend into an ice cream. The rest of the ingredients were in the pantry and fridge so the smoothie was quickly whizzed together. If you don’t have any frozen bananas and want to keep the smoothie cool then just add 2 or 3 ice cubes to the blender.

Ingredients

Serves: 2
Time: 5 minutes

2 large frozen bananas
3 dates, pits removed
400dl, 1½ cups nut, rice or soy milk, straight out of the fridge
2 expresso sized shots of strong coffee
1 vanilla pod, scrape out and use the fragrant seeds
1 rounded dessert spoon cacao
¼ teaspoon cinnamon

What to do

Place all the ingredients into the goblet of an Optimum or similar blender and whizz until well blended. Pour, serve, sip, and say “yum”.
