Excellent Chocolate Dessert

I call this the Excellent Chocolate Dessert because it truly is a big “yum”. It is great fun to invite the uninitiated to guess the ingredients. This is truly a delicious, decadent and yet healthy chocolate pudding and super easy to whip together. Many of the ingredients are straight from the larder, you just need bananas, a ripe avocado and some fresh fruit for the topping and blend away. The avocado provides us with the fats essential for absorbing fat soluble nutrients as well as helping brain function. Cacao, the so called super food, is high in magnesium, iron, and Omega 6 fatty acids to name a few as well boasting a high concentration of anti-oxidants.

Serves: 3 – 4
Time: 5 minutes

Ingredients

1½ medium bananas
1 ripe avocado
2 tablespoons & 1 dessertspoon cacao
4 tablespoons orange juice
½ teaspoon date syrup or honey
Seeds from one vanilla pod
Good pinch of salt

Method

Place all the ingredients into the goblet of an Optimum or similar blender or food processor and blend until smooth. Stop the machine now and again to scrape down the sides of the goblet. .

Place the chocolate pudding into glasses or small bowls and refrigerate until ready to serve. Top with fresh fruit and cacao nibs.

    Excellent indeed! Great success with guests and family! I didn’t have date sugar so I used Agave syrup. Cocoa here in France could be stronger for it was a bit bitter at first, so I added a pinch of cane sugar on top of the chocolate, and it was perfect! Everybody loved it! Thank you! 🙂
